A new Friday, a new recipe. This week we have for you the recipe of stuffed peppers. This is a slightly heavier meal, but still healthy. This recipe is for 4 people
800 grams mixed minced meat
250 grams of rice
4 red peppers
1 box of mushrooms
100 gram grated cheese
3 tablespoons breadcrumbs
200 ml vegetable stock (from a block)
Peel and chop the onion and garlic. Sauté them glazed in olive oil. Allow to cool slightly.
Preheat the oven to 220°.
Mix the minced meat with the onion, the egg and as much breadcrumbs as necessary.
Cut the peppers in half and remove the saw strips. Fill them with had and arrange in a greased baking dish. Sprinkle with the cheese and pour in the broth. Place in the oven for 30 minutes.
Cook the rice.
Clean the mushrooms and cut them into pieces.
Cut the zucchini into small cubes. Stir fry them together in olive oil for a few minutes. Add the rice and fry for another minute.
Serve the peppers with the rice.
