Pancakes are very popular with every generation. But did you know that you can prepare them in many different and healthy ways? These delicious pancakes based on Greek yoghurt are very light and also very healthy!
Ingredients:
50 grams of oatmeal
200 grams Greek yoghurt (0% fat)
1 egg
1 teaspoon baking powder
100 grams blueberries
1 tablespoon cinnamon
Preparation
Put the oatmeal in a food processor or blender and grind it. You can also choose to use wholemeal flour.
Add the ground oatmeal/flour to the Greek yoghurt in a bowl. Add the egg, baking powder and cinnamon to the bowl and stir well.
Add half of the blueberries and stir gently into the mixture.
Put some liquid cooking fat in a frying pan.
Fry the batter in the pan. You can make 3-4 small pancakes out of it.
Bake the pancakes for 2 minutes on one side, turn over and bake for another minute (or wait until they are golden brown).
Garnish with the remaining blueberries.
