Ingredients:
300 g cod fillet
400 g cherry tomatoes, halve the tomatoes
2 pieces of celery
2 shallots, cut into rings
2 cloves of garlic, pressed
Bay leaf
5 g parsley
5 g coriander
20 g almonds
1 tbsp paprika
1.5 tbsp white wine vinegar
1 tbsp olive oil
pepper
salt
Preparation
Spice paste : blend the parsley, cilantro, and almonds with half the garlic, half the paprika, white wine vinegar, and the indicated amount of olive oil in the blender. Season with salt and pepper. Brush the fish fillet with this mixture.
Heat olive oil in a thick-bottomed saucepan. Fry the shallot, garlic, celery, bay leaf for 2 to 3 minutes. Add the remaining paprika and the halved cherry tomatoes. Let it simmer covered for 10 minutes.
Place the fish fillets with the remaining cherry tomatoes in the bowl. Cover and simmer again for 10 min (keep in mind the thickness of the fish). Serve!
